For the salad you need per person:
- 1 slice of watermelon, cut into cubes

- 1 handful of tasty black olives, roughly chopped
- 1 tbsp extra virgin olive oil
- lemon zest and juice to taste
- freshly ground black pepper and sea salt to taste.

- Make a dressing with the olive oil, lemon zest and juice, and freshly ground salt and black pepper. Roast the pine nuts in a dry frying pan.
- Divide the cubes of watermelon on a plate and spread the finely chopped fennel over it.
- Sprinkle with the roughly chopped olives
- Then you add the dressing. Finish with the roasted pine nuts.
For the watermelon cocktail you need per person:
- 125 g watermelon, cut into cubes
- 150 ml coconut water
- lime to taste
- ice cubes
- some fresh mint to taste
And this is how you make it ...
- Put the cubes of watermelon in a blender and add the coconut water. Squeeze the lime and add the juice to taste. Mix for 30 sec.
- Pour the juice from the blender into a shaker tin and add mint leaves and ice cubes.
- Shake hard! Strain the cocktail into a nice glass.
- Garnish with a mint leaf.
- If you don't have a shaker tin, first put some mint leaves in a nice glass and mash it a bit. Then put some ice cubes in the glass and pour the watermelon juice from the blender into your glass..
